On my new rocket design every time I hit about 2000 m the engines cut off saying they have no power and cannot connect to anything. This is an unmanned probe and I've had this issue before and couldn't fix it then either. Any ideas? I covered the fuel tanks in solar cells and batteries and that did nothing.

Image would be helpful, or better yet, the .cfg so someone can fly it themselves and see if they can replicate the issue.

Most of the primary lift engines generate electricity when they're running, so I can't imaging electricity being the problem. Beyond that, I'm guessing blindly: linkage between the engine and the fuel tanks is getting broken (happens sometimes with the Mainsail).

Or possibly your fuel lines aren't right? Do please share a pic and .cfg as relin says.

What, if any, mods do you have installed? Having RemoteTech running without a communications satellite in orbit above KSC will cause your rockets to lose control over 3km (the base cores have an omni satellite range of 3000m).

Yeah, sounds like RemoteTech. Stick on a Reflectron DP-10 antenna, and that will give you commo out to 500km from KSC - enough to make low orbit. Beyond that, you'll need a bigger antenna.
