Could it hold together on Eve with enough struts or am i mad?

I assume you are using the heavy struts from KW. It also looks like you only have 2 parachutes for that monster. and remember Eve has a higher gravity than Kerbin, so your Vessel mass is going to balloon. I would seriously consider replacing those landing legs with I-beams and strutting the crap out of that part of your craft (cause if that fails the whole thing will fail) I have zero experience coming back from Eve so take my advice with a grain of salt, but I don't think you're going to make it down before you make it up.

I think that you could get away with a lot less rocket. Consider using 1.25m parts because the only thing that really matters is your dry-mass to empty-mass ratio and specific impulse. You can get 12k dV with a fraction of the size and then you won't need to worry too much about holding it together. Also, use struts very carefully because they cost a lot of dV so you only want as much as is absolutely necessary.

It is my understanding that Struts are Massless in flight.

Mass: 0.05. That is if they actually have mass outside the VAB/SPH display.

Considering how much the rest of any rocket weighs, that's next to to nothing. Either way, dV is a perfectly reasonable sacrifice for a rocket which won't fall apart instantly.
