is there a comparison of the different fuels? Like deltaV per kg / Volume at specific ISP?

Well delta-V per unit of fuel depends on the dry mass of the rocket and on the engine. The fuels used are a major factor in the engine's Isp but not the only one. But all the stats should be visible in the game anyway.
