What do you usually write on flags?

In my universe, astronauts are almost invariably pressganged or shanghaied members of the general public and very few members of the general public are literate.  This is because, thanks to the march of technology always making their lives easier, the ability to comprehend anything more complex than traffic signs, smartphone app icons, emoticons, and the occasional stock phrase of 1337 long ago ceased to have any bearing on their health, wealth, or well-being.

It's therefore a very rare astronaut who has the ability to write anything on a flag plaque and those few are always nobs wholeheartedly committed to the cause, so they spew the party line.  If the generality of astronauts could write, their inscriptions would certainly all be obscenities and vows of eternal vengeance on whoever caused them to wake up already outward-bound for Jool, which of course is not deemed appropriate by the vested interests.

Thus, for these very practical reasons, none of my Kerbals are allowed to write on flags, not even those who have the education to do so.  All flag plaques are pre-engraved before the mission, usually with inscriptions that serve a useful purpose to the furtherance of the mission.
