Why does the camera change when I click on EVA?

Just as the title says. Before I go EVA in space I line up my rocket upwards, towards 12 o'clock. But when I click the EVA button, the camera changes and the rocket dips to some other random direction, like 9 o'clock, 5 o'clock or whatever. Why is it so? I'm having a very hard time making just basic EVA maneuvers because of this.

I follow Scott Manley's Career Mode tutorials, and he doesn't have this problem. Look at 11:25 in this video, the rocket stays in the same direction when he presses EVA.

Because the active 'vehicle' is the Kerbal, and KSP rotates and zooms to that, not the rocket. Scott Manley probably knew exactly which way his Kerbal would be facing so put his camera in that position first.

Normally in an EVA, if you're in orbit, the EVA camera rotates so that "up" is relative to Kerbin's north (or any planet's north, for that matter...). But in this video, he's on a sub-orbital trajectory, since he just burned straight up. So the camera's "up" in that case is relative to the ground, not to north.

As for the EVA maneuvers, practice makes perfect. You don't have to be lined up with the ship to do anything, you can collect science from equipment and repack chutes and grab the ladder from any angle (build your ship with additional ladders to make it a bit easier). EVA is quite challenging but once you get the hang of it you will find yourself wishing that it had more purpose... which is where Kerbal Attachment System comes in handy.
