Well, I haven't made anything unique yet but heres a VTOL SSTO in it's experimental stage which gets its VTOL capability from the new Vernor RCSengines which feed LF/LOX instead of monopropellant.

Meaning it auto-throttles each thruster to keep you balanced regardless of CoM position. Brilliant! Tuning the thrust to get a stable hover is impossible, though, but perhaps you can get a tapping rhythm going on that works for slow descents. Or sequentially turn off some through action groups... that seems to require more fingers than you usually have free flying, though. A keyboard burner of a brilliant idea, I am not sure whether it'll be worth it or not but it sure is ingenious.

I see your sans-landing-wheels plane and raise you my own:

I built this to test the smallest SRB at 17.3km altitude for a contract.

Of course, it didn't work initially, it took some redesigning from the original...

It takes off with modular girder segments on radial decouplers for skids. They get jettisoned after takeoff but I'm quite proud of how well they work.

You want unusual? Here, have the Kraken:

The MSI Kraken was quickly pieced together as a result of Allison Kerman stranding him/herself (that is the most female name I've seen for a Kerbal, but... screw it, not going into that discussion here) in orbit of Mun on a science mission. Normally, we'd have sent an unmanned rescue ship to pick up the strandee, but the truckload of science on board meant that we really, really wanted the ship, too. Thus, the Kraken.

The Pioneer 3A spacecraft is swallowed captured by the tentacles girders of the Kraken, the red eye light of the SAS beaming out.

Fortunately, the Kraken proved to have no affiliation with that one from Ancient Kerbal Lore and actually helped get Allison and the wealth of science home without breaking the laws of physics.

Truly, the most bizarre Mun mission I've ever had to do.
