Now that's an intriguing idea!

The only problem - it takes too much time.

You inspired me to think about something similar, but simpler.

Assuming that all I want to build are simple crew-transfer craft made up of three 2.5m modules:

1) Command Pod (a selection of pods with parachutes, docking port, etc)

2) Fuel Section (a selection of Liquid fuel, RCS only, ect)

3) Selection of Engine or engine clusters

Since the modules would all have the large docking port on either end, the tug can assemble the craft head-on, rather than perpendicular.

I would personally find it much easier to dock that way than trying to assemble the craft sideways. My RCS kung-fu is lacking!

Yeah, still slower than just launching from KSC - but it might be fun to construct simple transfer craft like this occasionally!

Actually, since it would serve no practical purpose other than saying "I did this complicated and awesome thing" (something that could be said, by extension, of all of KSP), I would actually make it more complicated, and use crewed MMUs to move things around. That is how I offload fuel tanks...

Which are basically torque-less RCS groups I can dock to Jr. docking ports. Put between two and four around the CoM of the payload, and I can move mountains with them (at least big reds). For PoV options, BTW, you could always click "control from here" in the docking port of your choosing, so I don't get that last comment.
