Offset is the greatest thing since Kerbals invented boosters! Apart from the main core parts, pretty much every part now gets placed and then tweaked a little with the offset. I also use rotation and re-root a lot too, just not quite as much as offset. Offset and re-root have made work on unusual structures so much more possible.

I use all of them, probably in the order of re-root, then offset, then rotation.

Changing the root part is so useful when you're trying to stick bits to hidden bits, e.g. some batteries on the internal surfaces of a pair of 2.5m tanks, because you can set whichever part you want to stick stuff to as the new root and pull the rest away*. Offset is just lovely for aesthetics, clipping, and building wings that connect to each other. Rotation I use a lot for spaceplanes, when trying to get wings and tailfins to align nicely even though the thing they're attaching to may be an odd shape, though in most VAB cases the standard keyboard shortcuts are fine grained enough.

* I still don't know why the second click is required for re-rooting. I just click the same part twice and get the desired result.
