Rocket always bending down/bouncing

What exactly do you mean with bouncing?

Like a harmonica when thrusting? That usually means you have a relatively weak connection and a gigantic amount of thrust (more than the rocket needs/is optimal)

For any concrete advise, we'd need a screenshot though

If, however, it is not actually a "Bending" problem, but rather a "My rocket is pitching downwards whenever I do my gravity turn" problem you need more control authority, either in the form of reaction wheels or winglets/fins. Reaction wheels can go anywhere on your rocket (Though I suggest at the top so that they stay with you for a while) while winglets/fins go near the bottom to improve stability.

Yeah, that happens because physics calculations aren't easy, so when you time warp; it has to do more of them, and at lower quality.

In extreme cases, time-warping can result in rockets breaking entirely, even without rocket thrust.

Nothing's going to fix that. High phsycis warp skips calculations to speed things up, and in doing so it massively amplifies any applied force. Never go higher than 2x physics warp while burning engines, it's basicly begging for your stuf to break.

You should actually get a warning if you go above 2x that it makes things unstable. That warning is not kidding. (note that on rails time warping (5x and higher, only avaiable without thrust and in space) is perfectly safe)
