I tend to add mods that do something stock doesn't.

For example, the Hooligan airships.

I also have some that make life easier, such as Alarm Clock and Mechjeb.

I used to use Protractor a lot, but between the top two it's kinda been subsumed.

I'm a fan of the mods that add game-play elements that I want the stock version to have eventually. These elements are:

Mining/resource gathering

Life support

Re-entry heat

Communications relay and delay

Economy

Engineer

I use mods to get this for now, but overall I'm not a big fan of modding as I tend to spend too much time setting up and adjusting everything, and not enough time just playing. I much prefer a vanilla game that has everything I need and just works.

My barebones minimum is:

TextureCompressor (must have, get it)

B9 Aerospace

KW Rocketry

Space Shuttle Engines.

What I normally run in addition to those four:

KAS

Kethane

Figarro GNSS

Boat Parts R4

I do not run MechJeb, as I force myself to learn how to do some of the maneuvers.

I really enjoy RemoteTech. It puts an additional challenge to the game, and I always like when my vessels actually DO stuff. So now having a constellation of probes around Kerbin actually makes sense.

Deadly Reentry - I used to add something like heatshilds to my reentry vehicles even in stock, but there is nothing that beats seeing your Service Module disintegrate a few hundred metres from your capsule!

Procedural Fairings - genius. Nuff said.

Kerbal Engineer - brilliant. No more silly guesswork or back-of-the-envelope calculations.

I recently installed Stretchy Tanks, and My God, they are amazing. I even removed most stock and KW tanks, they are so awesome.

I tried FAR, but not too crazy about it. It makes reaching orbit trivial, and the rockets therefore look even sillier than with stock, and I do not do spaceplanes much.

Engineer - I like having my ships specs :)

KSPX - Should be stock. I actually change the 2.5m Nerva config as its way underpowered.

Hyperedit - Ship 'simulation' before actual launch

Kethane - I decided to start using this once I heard that official resources were cancelled.

I keep away from most mods though as I feel that they ruin my appreciation when the official version of that feature is added.

One mod that I want to like is KSP Interstellar, but I removed it from my install because its rather clunky at the moment. Too much extra stuff that I won't use (like the methane rocket) or don't want at all (like being required to use precoolers or my jets overheat). It really should be split up into smaller mods at this point, its suffering scope creep.
