Hollow interstages, preferably procedural, aber the only thing I really miss when building stuff.
This is a procedural fairings thing, go there instead.

I'm getting a problem with interstage fairings in which after launch they just kinda, fall off? In the F3 menu it says structural failure but I dont know why.

When I use the parachute docking port, it creates extreme drag. For one, it flips my rocket on takeoff, and when I re-enter, I slow down to 100 m/s by 23,000m.

Has the extreme drag with the docking port parachute been fixed? I really like that part

There seems to be a problem with the attachment nodes, they're way to deep in the engine nozzles. Especially in the swivel.

I'd love if you could launch a rocket into orbit and carry out your mission, then replay the events without the GUI and worrying if your rocket is still prograde.
Of course, it would only last up to when you go back to the space center, but it could also help with troubleshooting problems with your rocket/plane without redoing the mission several times.

When it overheats, it blows up.
If it's not doing that I need a bit more details on what's happening.

All stages have sepatrons and orbital insertion stages have probe cores so I can de-orbit them.

Could be the control surfaces on the shuttle, try disabling them.

I feel like this takes away from the point of KSP, to build your own rocket, fly it, and watch it fail.

The LES does seem to cause a slightly higher drag than a similar rocket without it, but it amounted to ~340m separation from its twin without the LES tower after a full 14400 tank / Rhino. That's less than 10m/s difference at the end of the first stage burn. In my test there were a few more parts on the rocket without the LES, so they weighed the exact same.
The problem I was getting was when I did even the slightest of turns, the rocket would flip out. (only a 5 degree pitch over)

I haven't noticed any issues with the parts you mentioned before. Have you tried it on an otherwise stock install?
Not yet, but I will try. Could be an issue with realchutes.

To install just put the contents of the zip directly into your gamedata folder.
Changes:
- Removed the landing legs
- Removed reflecting windows and solar panels
- Implemented @lagcity613's patch for the gigantors

Some parts (Mainly the escape tower and parachute dockingport) seem to have INSANE drag.
