Is this what a launch will look like with the new Aerodynamics in 1.0?

Y'know, now that the OP has mentioned it, I suppose having to start your gravity turn really early could be really fun! Climbing up and doing nothing for a while is really unrealistic and quite the boring gameplay experience.

This.

I don't have enough patience to do long launches and this is half the reason, right here :P

Given the movement of the stars in the OP... no. No stock KSP launch will ever take that long. Kerbin is so tiny that any gravity turn taking more than a minute or two is more hovercraft than rocket.

And no explosions? No flaming boosters being thrown all over the place? No wobbling engine nozzle? Launching a rocket in stock isn't SpaceX. It's Wile E Coyote.

Earth takes about 8 minutes and Kerbin takes almost 4? Sure, it's half ... but the general concept is the same.

I don't know how that should work with shape based drag.
My suspicion is that the effects of shape will be present but somewhat muted. So a pointy rocket will experience less drag going nose first than going sideways, but not as much less as is realistic. I hope I'm wrong because I don't feel KSP should willfully compromise its physics to give "arcade" gameplay. Rather it should develop and refine its interface to make the simulation accessible like it did for the orbital mechanics going from nothing at first, then adding a real time orbit map, then adding manouvre nodes and course predictions. We know Squad at least are working on the equivalent for the aerodynamics.
