Unsatisfied with a diet consisting merely of "snacks", a group of like-minded Kerbalnauts and Kerbal culinary specialists with discerning palates founded the Space Professionals Institute of Culinary Excellence (SPICE), with the purpose of developing, evaluating and promoting better crew provisions for long-duration spaceflight and planetary exploration.

I've created this thread to gather names and ideas for packaged foods and beverages that could conceivably be eaten by Kerbalnauts - such information could potentially be used in fanfiction, fanart or even as IVA props. Contrary to what folks like /u/jansenart would espouse, a Kerbal diet consisting solely of snacks is monotonous and lacks the full set of nutrients required to keep Kerbalnauts in good health while participating in long-duration space exploration missions.

User submissions are welcomed, although addition to the official list is not guaranteed.

1.0 Submission Guidelines

  • Think of items that could conceivably be eaten from a bag with a spork (spoon-fork) in both low and normal gravity environments, with minimal crumbs/waste and can survive storage during long-duration space missions
  • Items requiring refrigeration should generally be avoided, as there is limited space/resources available for their preservation (with the exception of Ice Cream :P)
  • Human foodstuffs are acceptable, but kudos will be awarded for Kerbal foodstuffs (short backstories are welcome)
  • Avoid overuse of the letter K to precede item names (a few instances are fine)
  • Avoid obvious references / allusions to celestial bodies in the Kerbol system, as they sound tacky
  • Fresh fruits, vegetables and bread are often consumed during the first few days of a mission to mitigate spoilage, so just focus on packaged/preserved items instead

 


2.0 Glossary of Abbreviations

  • (B) - Beverage: Drink powders mixed with water before consumption
  • (F) - Frozen: Requires refridgeration, which is scarce on most spaceflights
  • (G) - Gel: Powdered condiments are suspended in a oil-based liquid or gel to prevent particulates contaminating equipment (as well as sneezing fits)
  • (IM) - Intermediate Moisture: Food with some moisture retained, but low enough to prevent spoilage
  • (I) - Irradiated: Meat is typically treated with ionizing radiation to prevent spoilage
  • (NF) - Natural Form: Commerically available off-the-shelf items that are ready to eat
  • (R) - Rehydratable: Food that has been dehydrated previously, and is rehydrated in hot or cold water before eating
  • (T) - Thermostabilized: Food that is sealed inside a pouch and then heated under high pressure to sterilize it

4.0 Fresh Food in Spaceflight

A diet consisting solely of the food and beverages processed and packaged in the aforementioned manner are suitable for short-duration spaceflight. For longer-duration spaceflight or planetary exploration stays, however, packaged space food should be complemented by fresh provisions, both for psychological support and nutritional balance reasons. Various methods can be used to accomplish this:

  • Small orbital stations, planetary outposts and interplanetary transfer vessels should have at least one culinary herb garden; recommended species include pepper cactus, marrowort, citrella, saltleaf, yellow clover and firewhisker
  • Larger stations and ground bases should have at least one hydroponics garden, to grow fresh fruit and vegetables that would otherwise be unsuitable for pre-processing into space food, such as Greenleaf and tomatoes for salads
  • Fresh food, including wheat-based breads, should be provided periodically via unmanned resupply vessels. Such items must be consumed within three days after the arrival of the resupply vessel, to minimize storage/preservation requirements.
  • Kerbalnauts may elect to receive care packages from family/relatives back on Kerbin, which may contain provisions otherwise not in the approved items list. Care package items must still be demonstrated to survive the rigors of launch, be easy to consume using limited eating utensils, and produce little waste or crumbs.

I just read this, pepper needs to be suspended in oil so it doesn't fly around and cause a sneezing fit. Not sure about salt, but I imagine it's similar.

NASA definitely suspends their salt and pepper in oil-based liquids.

I decided to go with gels, since that keeps them semisolid enough for microgravity applications, but I'll probably amend the description with mention of oils. Thanks!

You're welcome! I don't see dehydrated ice cream, but then again, that isn't used in real life.

I don't see dehydrated ice cream, but then again, that isn't used in real life.

Dehydrated ice cream was flown on Apollo 7, but the astronauts didn't like it very much, and it never flew again.

On the other hand, astronauts on the ISS regularly enjoy ordinary ice cream, kept refrigerated in one of their experiment freezers. I didn't mention this in the list, but I'll probably create a new category soon.

What about applesauce?

Couple of my headcanon food and drinks.

Prickleberries

One of the less imaginatively named fruits to be found on Kerbin, prickleberries resemble the Terran lychee, although with darker flesh and a somewhat stronger flavour. Prickleberries are a versatile crop which can be eaten as a fresh fruit, made into preserves (prickleberry jam is an excellent accompaniment to many cold meats and cheeses) or processed into a number of alcoholic and non-alcoholic beverages. First pressing prickleberry juice is normally consumed as a fresh juice, whilst the second pressing is laid down in specially prepared wooden barrels for up to a year. The juice absorbs tannins and other phytochemicals from the barrels, which act both as flavourings and natural preservatives. Third pressing juice and pomace is typically used to make prickleberry cider, a light, sparkling drink of no more than 3% abv.

Sapwood

Wild sapwood trees originated in the Kerbin rainforest and Kerbal scientists believe that they became insectivorous as an evolutionary adaptation to wet, nutrient leached soils. Long parallel grooves in their trunks exude a sweet viscous sap which traps insects and gradually carries them down to the base of the tree where they decompose and are absorbed by a network of near-surface roots. Sapwoods have long been cultivated by kerbals and in the equatorial and mid-latitudes of Kerbin they are very nearly as ubiquitous as the Kerm. Domesticated sapwoods are larger than their wild cousins and less dependent on insect consumption. This is partly due to centuries of selective breeding but mostly because they are grown in Kerm enhanced soils.

Although sapwood sap can be fermented and then distilled into a strong liquor, similar to a Terran rum, this is not a particularly popular drink on Kerbin. The vast bulk of harvested sap is cleaned of insects and then dried to make a sticky, toffee like substance, beloved of kerbals and kerblets alike. The dried sap is also used to make a number of extremely popular non-alcoholic cordials, which are consumed with water, sparkling water or milk. Two notable specialist cordials are smoky sapwood (produced in old-fashioned wood fired evaporating pans) and wild sapwood (colloquially referred to as 'crunchy sapwood') which is harvested, insects and all, from wild sapwood trees.

Djan chips.

Popular snack food across most of Kerbin and equivalent to the Terran tortilla chip. Traditionally served as a street food in a twist of paper but could be more robustly packaged for spaceflight. Normally served with various spice dustings, SPICE chefs have experimented with applying the spices in a oil-based liquid and then second baking the chips.

Kaya jerky

Strips of dried or smoked kaya meat. Kaya are indigenous to the northern reaches of Kerbin and somewhat resemble the Terran yak. Early kerbal settlers relied on them for everything from food to needles and thread but in modern times they are still prized for their luxurious wool and tasty meat.

Luffa-eye peppers

Luffa are a very distant cousin to modern kerbals. In evolutionary terms they diverged from kerbals far longer ago than, for example, the great apes diverged from hominids on Earth. Six limbed, large eyed and long necked, they inhabit some of the coastal areas on Kerbin. Luffa-eye peppers resemble a small Terran bell pepper or a large Terran chili pepper but when properly ripe they are sweet rather than fiery.

Herbs

Crew members on Endurance, the first long duration kerballed space station experimented with growing herbs in zero-gravity, which has since become a tradition of the Kerbal Space Program. Having living plants aboard their spacecraft is thought to be psychologically beneficial in general and herbs provide the very tangible benefit of making space food far more palatable than it might otherwise be. Typical kerbal herbs include: pepper cactus, marrowort, citrella, saltleaf, yellow clover and firewhisker.

Did I miss tortillas? They are less like to crumble, compared to bread.

The Kerbal equivalent is Tabula, made in Ikxcal (Mexico) - tabula has become practically the staple of Kerbal spaceflight, because in addition to the reduced crumbing, they are also palatable to Kerbals of all cultural/ethnic backgrounds.

What about spirulina?

I've read a little about food bars made by the ESA, but don't know much about it to make a proper assessment.

Thanks! I'll have a dig through First Flight when I get a spare minute and see if I can find some more space worthy foodstuffs that I've described in enough detail to submit for the list. Great thread by the way - this forum needs more world-building! :)

Cheese Noms

Small, artificially flavored cornstarch rectangles. Originally in a spherical shape, these were "invented" when Jeb sat on a bag of [REDACTED] brand cheese-flavored snack. In their wafer shape, they can be packed into a small container, and are a fun favorite on stations, where they are often thrown about into other kerbonauts' mouths.

Kubrikos

These round, torodial shaped snacks are an interesting thing native to the planet Kerbin. Made by mixing together fruits and drying them, and then grinding the dried fruits into a powder, mixing it with a medium and pressing it into various fun shapes. They are available in a variety of colors, and serve as a way to add some variance to drab MREs.

On an off-topic note, one of the clubs at my school is SPICE. (students participating in culinary expertise, iirc)

In their wafer shape, they can be packed into a small container, and are a fun favorite on stations, where they are often thrown about into other kerbonauts' mouths.

Kubrikos

These round, torodial shaped snacks are an interesting thing native to the planet Kerbin. Made by mixing together fruits and drying them, and then grinding the dried fruits into a powder, mixing it with a medium and pressing it into various fun shapes. They are available in a variety of colors, and serve as a way to add some variance to drab MREs.

Got it! I just missed it, by 2 minutes. :) Since I don't see this on the OP: Sandwiches, various fillings, in 1"x1" cubes, coated in wax to prevent crumbling.

Yep, mini-sandwiches would be excellent - two variants I came up with so far are grilled cheese and cucumber, the latter being particularly quintessentially Kritannian (British).

A couple more ideas.

White beans.

White beans are a staple crop on Kerbin and provide the base for a wide range of dishes, of which white bean stew is a particular favourite, especially in the equatorial regions. A classic white bean stew consists of white beans, onion and mixed mushrooms, stewed with marrowort for flavouring and served garnished with yellow clover. However each Regionality and in fact, almost every village, tends to have their own version of the classic stew. The one thing almost all of them have in common is a lack of meat as an ingredient.

White beans are a hardy crop that grow well in a range of conditions, including very wet soils. Experiments with growing them under zero-g conditions suggested that they should be emininently suitable for the space programme although they were originally rejected as being a relatively high residue food. In the words of Geneney 'Gene' Kerman: "I do not believe that white beans are compatible with our current air recycling and sanitation equipment." The rise of hydroponic modules on larger orbital and off-world bases has prompted a cautious re-evaluation of this stance.

Greenleaf

Another crop that has only really found widespread acceptance in the space programme with the rise of hydroponic farming, the greenleaf plant is a small, compact bush, resembling an oversized Terran lettuce, with large, dark green leaves each supported by a central fleshy stem. For cooking purposes, the stems are normally removed and used separately - relatively few dishes use the whole leaf.

The flat parts of the leaf have a mild peppery taste and are popular as a fresh salad, wilted in butter as a side vegetable or baked in layers with stewed vegetables and meats. Greenleaf rolls are a common alternative to sandwiches, consisting of a single greanleaf half, wrapped around a savoury filling. Egg (scrambled or boiled and chopped) and greenleaf rolls are a common breakfast dish. The stems are a versatile foodstuff that may, for example, be eaten fresh as a salad vegatable, boiled and served in a cheese sauce or dipped in breadcrumbs and deep fried. The latter are a popular bar snack and appetiser across Kerbin.

Greenleaf has a mildly laxative effect when consumed in excess, although this only tends to be a problem in very young kerbals with their proportionally lower body mass.

Creva

The nearest Terran equivalent to the creva is probably the ibex, although creva tend to be larger and heavier set. Their tough but flavourful meat is normally used in stews or sliced thinly and baked in layers with various fruits. Both meals are eminently suitable for freeze drying and creva stew wet-packs were a favourite meal for the early Kerbonauts.

Tubers

Tubers of various shapes, sizes and colours are grown and consumed in most parts of Kerbin and freeze dried tubers seemed like an obvious base for space rations. Unfortunately, in the words of space programme chef, Derny Kerman, early experiments: "were a horrible slop with awful consistency and all the taste of wet plaster." Kerbonaut Sherfel Kerman (navigator on Pioneer 1, the first circum-munar voyage) suggested adding dried pepper cactus to add fibre and absorb water, which turned out to be a huge improvement. The resultant mixture did eventually prove to be a staple ration pack on the early mid-range spaceflights.

Pruke is a furry, flightless bird-like animal found in the northern areas of kerbin. Although many Kerbals have tried to domesticate them it has been proved that the fiber that makes up Kerbals hair, fingernails and toenails is addictive to the Pruke and they have made a habit of eating portions of Kerbals attempting to domesticate them. Famously, a whole Pruke was smuggled aboard the MunBase1 mission and several samples were lost because their storage devices were re-purpoused to cook the meat. Pruke is quite tasty, however the fur has a annoying habit of ending up everywhere, even worse the hair is really good at getting stuck to things with static electricty.

(F) Keckberry:

Keckberry is a low bush with long spikes found all over Kerbin. The spikes have a mild poison that causes intense stinging, because of this any kerbal who has ever gone hiking referees to it as 'that (insert swear words here) bush. The berries are sweet and nutritious, but they have a hard, spicky shell causes great care to be taken to avoid the spikes on the shell touching the berry.

- Plain meat must be cooked and irradiated (I), while meats cooked in sauces or stewed should be thermostabilized (T) or rehydratable ® respectively; plain meat alone cannot merely be rehydratable.

Even if dead, smuggled avians are unlikely to be properly processed for spaceflight, and may still contain pathogens.

If this Pruke had been properly processed under SPICE oversight, then it wouldn't need to be smuggled in the first place.

Personally, that'd be neat, but it might be too much micromanagement for most users.

Fouché - a popular dessert on Kerbin, originating in the Frank republic. Made of pastry, with a filling of any kind of fruit and sugar. Also popular with a vanilla filling. Prepackaged in either bite-size squares or as a unit for group consumption. A favorite across the system, as microgravity environments tend to lack the gravity that makes them 'collapse' after their baking at home, consequently they are usually baked on space stations or on smaller moons. Jacques Kerman, head of the Kerbin Cooking Society once chartered a flight into orbit, and sampled a fouché . He pronounced it 'Food as eet (sic) is meant to be eaten'.
