the "right" assent profile for new aero?

That's how I do any launch to Kerbin orbit, I try to maximize Oberth effect by getting my target AP during launch. If I'm using a multi-stage rocket, I will try to aim so that I hit my target Ap while my Pe is still at around 25km (because I'm a good steward of space) but if it's an SSTO, I don't pay as much attention to Pe, though I prefer it to be positive.

But, if you are burning for the Mun or Minmus, or really anywhere else you should do so from 70-100km orbit (or a direct burn with Pe still negative if you prefer)

Agreed, low circular orbits are better for planning. As for the Mun, there's the good ole' Mun shot, or "Shoot at Munrise and just keep going prograde after gravity turn". It's so easy, a caveman can do it!
