So.. I'm in orbit, I just right-clicked on a goo container and selected "observe mystery goo". This window pops up.

Then I click on the green icon, i.e. "keep data".

Now I can right-click on the lab and select "process data", as shown here:

As I do that, I get the following window:

I therefore click on the yellow icon, "process in lab module".

I got this message:

When the processing is completed, there's nothing more to do.. If I right-click the lab, I get the same as before, i.e. "process data".

What am I missing?

Once the processing is complete you can right click the Mobile Lab and "start research". The data you processed by clicking the yellow chemistry bottle icon is now shown as the Labs stored data. This is converted, over time, into science points that collect until you i) transmit them, which makes them available to spend or ii) your lab has 500 science points awaiting transmission. If that happens the scientists take a break and open up the snack rations.

The amount of Science generated per day can be increased by; adding more data - by processing another experiment (although you only have space for 500 units of processed data) Or by adding more scientists and/or higher skilled scientist's

To add to what others have already mentioned, I too was in a lull as far as needing more science in Science mode, in order to unlock stuff. So I decided to revisit the Mun and Minmus, this time by complete chance with a 2.5M lander with about 2,000-3,000 m/s extra dV and used it (with my 'skills' it took me a whole night of crashing and reloading) to hop over several different biomes on the Mun, and Minmus, and ended up netting probably 1500-2000 science points, which I promptly spent on science experiments (Graviolli detector, etc.), and other 'fun' bits (3.5m rocket parts and power gen).

Start 'hopping' biomes on Minmus because it's much 'cheaper' with delta V and piloting mistakes, and once you've had your fill, recover that craft on Kerbin, and head out to the Mun and try the same. I went against my usual habits and on these high payout trips went into Polar orbits, just to force myself to land and get science from previously 'virgin' biomes. :)

Yes, 2-3000 m/s let you visit all biomes on Minmus.

Some tricks: first is to use an scientist they can restore material lab and goo containers letting you repeat the experiment.

Second it to use transmit and then store all experiments who require multiple readings. Goo, labs, gravitation and seismic. Surface samples is a bit more complex as you pod will fill up with experiments and you have to browse to the surface sample then transmit, then collect another sample.

My standard way to get science is first to get into Mun orbit, you should have unlocked eva before this, now do eva reports over various biomes.

Then an Mun landing for contract and science.

Next up is the Minmus mission, here you need an scientist and the goo and material lab.

As you want to maximize return you want to bring at least 2 km/s fuel to Minmus.

I tend to also transmit crew, eva, termometer and barometer readings, you don't have to wait 9 days and the date is safe even if mission fails.

Then I get wheels take an trip to Mun east farside crater, near the canyon. Area hold 7 biomes inside of 5 km.

East crater edge hold four including the two polar ones.

At this time you should also have unlocked the seismic and gravity scanners so I tend to do an second Minmus mission with them.

This would fill out the science tree fast.
