So, suddenly KSP will not start anymore. It starts loading but then it just hangs. I don't get it, because yesterday it was functioning fine, and I haven't changed anything?

the last line before it hangs is: "LiquidFuel not found in resource database. Propellant Setup has failed."

does anybody have any idea?

Sounds like a game file has been deleting or corrupted. If you use Steam, do an integrity check. If you don't, redownload and unzip the game.

I redownloaded, but still the same problem persists.

I would delete all the module manager cache files in \GameData (leave ModuleManager.2.6.8.dll but delete its cache files named ModuleManager.*) and also the PartDatabase.cfg file in the root folder and then start up KSP. The game will rebuild all these files. It may help to resolve the corruption.

@MalevolentNinja Thanks for the hint. Found this thread because I ran into exactly the same problem. Yesterday KSP was working fine, today it just got stuck loading on the same part over and over again. Deleting the files you mentioned solved it.
