Pilots, pilots and some more PILOTS

Does anybody here know why would KSP in 98% of cases in rescue missions give me only pilot kerbals? I have already gathered alot of pilots but lack engineers especially scientist. So instead of giving me something of more use and benefit the game keeps me filling up with the crew that I have already in abundance. I am thinking of avoiding those kind of contracts unless I need some extra cash.

Its totally random.. you just got unlucky. If you feel confident you can go into your save persistent file and change pilots into other classes.

Another trick.  Launch a dummy craft to the pad and f5.  Revert to VAB.  Accept the rescue contract and go to the astronaut complex.  The rescuee will now be on the 'Assigned' page.  Mouse over to find specialty.  If it's an undesired type, relaunch a dummy craft and f9.  Decline said contract.

Yeah kind of strange this is. I do not beleive it is bad luck. From starter 3 kerbals up to more then 12 kebals that I have got from rescue contracts and almost all pilots.

That seems to be the absolute definition of bad luck.
It truly is just random.

Well,... recently, similar contract, accepted, equipped rocket with scientist in MK1 and empty landing can below to rescue mission.

I expected rescued to be pilot,  I required one to maintain SAS for EVA over Kerbin biomes, as well as to lock retrograde on descend.

Imagine my face expression, when it was .. another scientist.
