How about a VTOL with rotating engines? Look at Majorjims stock hinge, if you need an idea for a hinge.

I've been having quite a bit of fun building aircraft to do multiple part test missions in the early career game, ie without many parts available.

Have you tried firespitter and given helicopters a go?

Flown under the bridge at the KSC?

Have a hunt through the challenges section on here, loads of airplane related ones, such as seaplane to orbit, lightest SSTO, Ion powered aircraft etc.

Accept that you're getting  bit bored and take a break.  I got a bit bored of KSP several months back and stopped playing for a while, now 1.1.x is out I'm getting back in to it again.

- going lowtech

 -small part count,

- monsterous payload, 1 kt is my designer's wall
