[Explained] Why do ships suddenly change direction on the map?

I keep seeing people asking why ships suddenly change speed & direction on the map or say something that implies they don\'t understand why ships appear to do that, and I haven\'t seen many people try to explain it.

Or if you don\'t want to watch that, the basic explanation:

1. Everything in space is moving, and speeds are all relative to other objects moving.

2. Your speed and direction on the map is relative to the object you are in orbit of/landed on (the Sphere of Influence).

3. So when you change SOI, you can seem to suddenly switch direction and speed because relative to the other object, that is the direction and speed you are going.
