My planes don't steer correctly

If by "banking" you mean simply "roll", then yes, that's pretty much correct.  An actual banking turn is a combination of rolling, and pitching up.  (Often with some yaw added, too.)

When one flies a aircraft on earth,banking or rolling the plane changes the angle if the lift in such a way as to change the heading in the direction the plane is banking. (or rolling). Is this not the case on Kerbin?

You're not doing anything wrong, except for thinking that KSP will have aerodynamics like a normal flight sim. In regular flight sims, a 30 degree bank will give you a good turn speed. In KSP, you must apply positive pitch in your bank to get the plane turning. Sometimes a 30-45 degree bank will give you about 1 degree of turn every 10-15 seconds. If you pitch up in the same bank you will probably get 30 degrees per second.

If you bank, your prograde marker will slide off to the side a little. Then your SAS will apply yaw in the other direction to keep you going straight. It's necessary to overcome the SAS by applying pitch and yaw control as said above.

That is not true if your wings have an angle of incidence - ie. there is lift being generated when the plane is flying prograde.

I usually have about 3-5 degrees of angle on my wings and I can fly my aircraft with SAS holding prograde. Banking right will make it turn right because the lift will cause a heading change.

In KSP it still won't turn like a regular flight sim. I have positive AoI on all my designs as well.

Try flying without SAS and use your trim (ALT+S or ALT+W) to hold attitude like you would in a real plane. And don't forget to use some rudder while you turn.
