What's control stiffening: The faster you go the less responsive your control surfaces are (because of pressure build-up, I think). NEAR had that but KSP obviously doesn't. It would be nice to have it though, simply because I'm sick of accidental G-LOCs involving my kerbals and the planes tend to be wobbly without it. Gotta adjust the control surface green meter thingy all the time.
