You know, that actually makes sense for the rocket engine since it's a hybrid with the oxidizer pump powered by a car engine. More thrust? Just step on the gas to rev up the oxidizer pump!

It would make sense if that was how it was set up, but unfortunately that's not the case! The pedal is for the jet engine, the rocket is just a switch on the steering wheel.

The rocket is two switches on the steering wheel - one to bring it to "idle" power, and a second to bring it to "full" power.  (Plus assorted toggles on the control panel.)   Since it use H2O2 as oxidiser, presumably the "idle" mode is to warm the cat pack and ignite the solid propellant before going full throttle.  My guess is that this eases startup transients.

We know there's a V8 car engine acting as the oxidizer fuel pump, so I presume the idle switch starts up the V8 and rocket igniter, and the full power switch gets the V8 to the redline.
