What mods and plugins should I get?

Depends on what you want to do.

R4mon's MechJeb is a pretty reliable autopilot and works with most mods that I know of, making it a useful tool for learning (study the way it flies!) and for sending up routine/gigantic processor-intensive/important missions.

The_Duck's Satellite Relay Network is cool if you want to add difficulty to any robotic missions (space probes, etc).

RemoteTech by JDP builds on the Satellite Relay mod to allow you to control discarded stages that you still want to use, such as the ascent stage of a VTVL heavy lift booster, or a child spacecraft such as a robotic lander. MechJeb has this functionality as well, but RemoteTech makes it better by allowing you to use SAS instead of just engines.

Zorkinian's Orbital and Planetary Construction mod lets you build huge ships in space without worrying about getting them off the ground every time.

Damnyoujapan's Damned Robotics has many, many uses.

And so on. As you can see my list is mostly geared toward addons that help me build complex machines, but you might prefer addons that let you build more challenging contraptions to fly more by your own hand. It's up to you what's good for you, really.

zoxygene plugin is fun. basically a solar powered life support system. It adds quite a bit of difficulty, the parts are very heavy. Also, you can kill your crew on a munar transfer by accidently doing it in the shadow of Kerbin where your solar panels won't work.
