Is it an AMD thing?

Could be. Do you use the the driver that came preinstalled with your Distro or did you try to install a new version from the AMD website? Then there's also the additional confusion that there are still two different sets of AMD drivers out there: the older "radeon" driver and a newer one called "amdgpu". You might be able to choose between them in the driver manager.

You could also try to run the game with the "-popupwindow" parameter: https://wiki.kerbalspaceprogram.com/wiki/Startup_parameters

Also, if I alt-tab or press the windows key, then run Firefox, the entire desktop crashes, sending me to the Mint login screen.

I run Mint myself and don't get Cinnamon crashing, and I run KSP full screen, but I use Nvidia so that may be relevant.

To answer your question, to the best of my knowledge, there is no shortcut to toggle fullscreen (or if there is I haven't found it) - I set it in the games options instead (I know you mentioned that's not ideal).

Dual monitors is definitely an option - one of the really nice things about MInt (and probably linux in general, but I have no experience in this) is that if you click outside the KSP window, unlike Windows, it won't minimise the game.

Have you tried upgrading Mint to 19.1? A new version of Cinnamon was just released, which may solve your Cinnamon crashing issues.

I think you are confusing the request of the application and what the window-manager does with it. The application just asks for stuff and the wm decides what do with it. The last say what size the window has and where it is positioned is with the wm (to the best of my knowledge). So if you want to use a tiling wm (such as xmonad, awesome, ratpoison, etc.) change the metaphor you have in your head about how windows work. :)

I'm not saying that a tiling wm (one that is hostile to mice, at that) is the right choice for everyone, but I wouldn't want anything else, ever. There is probably a solution for your fullscreen problem that allows you to continue using your current wm. And switching wms because one application is broken is probably not the right reason.

Although if you DO want to try xmonad, I recommend using it in conjunction with mate (mate is a "we hate gnome3" sort of fork just as cinnamon is, afaik). You can get back to me if yout want to know how to set it up (it is by far not obvious and/or well-documented). But that's probably off-topic, here.
