Most of my Kerbals are on the mun. I have no more pilots to Rescue them.

Welcome to the forum @Yoloking Mapping.

Not all probes have the full SAS functions  (only the Stayputnik has none) and you press 't' to activate it. On this page of the wiki you can see the capabilities of each probe core: https://wiki.kerbalspaceprogram.com/wiki/Probe

By using a probe, with an empty capsule (check the passenger roster to empty the crew)

Only land on the Mun when the landing spot (the stranded crew) are in daylight. If you have the CommNet stuff activated, i hope you stranded them on the kerbin-facing side of the Mun, otherwise you need to plan to have a relay satellite in view of your stranded crew

I tend to wait to do robotic landings until I have the HECS probe core, because it gives you the "retrograde hold" SAS mode. It is certainly possible to do landings with just "Stability hold", but I think anyone other than an expert would also need RCS on their lander to keep the lander from falling over after it touches down.
