Been casually playing KSP for a few months now, eagerly awaiting every single new update in hopes of building a space-helicopter-fighter-jet.

Supposedly, the latest one lets you see the inside of the cockpit!

But for the life of me, I can't figure out which button activates this hidden gem, and Google was just as confused as me, so if you can tell me, I'd greatly appreciate it, and any other beginner to mid-level tips you can give.

Also, if someone's already compiled a list of key functions somewhere that I haven't found yet, a link to that would be even more greatly appreciated.

Look at the key bindings in the settings configuration file. It lists all commands including those not exposed on the Settings screen.

Welcome to the forums, Saira.

Just hover over your screen where you can see the kerbals in the bottom right corner, you should see two buttons and you should press the IVA one.

I also recommend that you check you have attached a parachute and to cut off your engines before trying to seperate from them.
