Can't figure out how to stack fuel :( keeps putting on x-axis

I am trying to make a ship, but it needed more boosters!

The solid fuel was not doing well enough, so I decided to try to build larger liquid fuel rockets to go on the side, but they refuse to stack! I tried loading the kerban X stock ship or whatever it is called to see if it did the same there, and well this is what keeps happening:

how do you get them to stack correctly? I can only get it to work if its on the main body, but even then if i do it that way i have to put the decoupler on the very top of the fuel and that is too dangerous for my tastes!

is there some button to push to make them stack better? Ive tried for 15 minutes and gave up!

The decouplers need to be higher up on the center so that it will push the top away before the bottom. Otherwise, assemble just one of the boosters. Then select the symmetry to apply all six assemblies at once Add bracing and fuel lines to complete. Still no guarantee the parts will go where they should.

You need to bring the green connection "balls" together. In the first picture, I suppose the tank is upright when picked up, but not hovering over the vehicle. Move your mouse so that its connection ball is where the vehicle's connection ball is. It should snap right into place just below the upper tank. To make it more clear: Don't move your mouse pointer to where the vehicle's connection ball is. Instead, move your mouse so that the part's connection ball touches the vehicle's connection ball. It does not matter where the actual mouse pointer is.

Guessing from the picture, I suspect there will be a problem with that radial decoupler, though. Perhaps remove that first.

In your first picture is looks like you are trying to connect the tank to both the tank above and to a radial decoupler - this won't work, each part can only be added as the child of one parent part.

If you are having difficulty attaching to the bottom of an existing tank I recommend rotating the rocket until the tank is on the side so you can have the tank in the right place while the cursor is over empty space rather than the central rocket. If the cursor is on the center at the same time as under the side tank it can get confused.
