Yes, very easily unless you are docking very big ships.

How fast you can dock depends on a few things:

The alignment of the docking ports and how close the velocity vector is to the docking ports normal.

The mass of the vessels involved.

The position of the ships docking ports in relation to the center of mass.

I usually dock at around .5 to .6m/s, but one time I docked (somehow) at around 2m/s. It drastically changed the station's orbit and it took alot of rcs (and rotating) to get it back into it's original orbit. I recommend you just dock at a relatively low speed until you are completely sure about how docking mechanisms work.
