Is there a list of the experiments in the game? Or is it just a "try something and find out if it's worth points"?

Just try it out. I went to Minmus with a science bay and 2 goo pods and did science every time I entered a SoI, got into orbit or landed. On my way back I managed to squeeze a close fly-by to the Mün out of my engines and returned to Kerbin. Netted me 420 science or something. Not bad considering that I had not really planned the mission. But that's Jeb for you: He delivers every time!

low atmos flight, high atmos flight, low orbit, high orbit

and these multiply by the number of planets

You can do this with crew and eva reports, lab and specimen containers and the various instruments, like thermometer and the avionic nosecone.
