Reverting to a operating system savepoint is the only option if you haven't made backups manually.

If you're quick to realize your mistake when it happens you can Alt-F4 your game before it saves to persistant file (autosave). Other than that you're out of luck.

I am afraid you'll be re-launching many vessels unless you can manually replace your current persistent.cfg with a backup. (The unmodded game does not make backups.)

Even if you don't use quicksaves to correct for failed actions it is still wise to make quicksave every now and then just in case something like this happens. (Or if you persistent.cfg gets corrupted.)

oh darn. welp, no sense in crying about it. Guess I'll have a chance to improve.

If you were playing the career, you might want to skip the suborbital science grind part. Open the persistance save file with Notepad, find the line that says how much science you currently have, and add what you deem apropriate for a quick restart.

I'm not sure what the line you need is, but that should be easy to google
