Ailerons should not work in space

You already have to use either reaction wheel torque or RCS thrusters. The movement of control surfaces in space does not have any effect on the craft's attitude (and it's a very limited effect above around 25–30,000m, diminishing as the atmosphere thins, as far as I'm aware).

Lightbulb moment!

Whenever I try to make a spaceplane I get so high, hit some nice speeds, but always end up slowly dropping forwards uncontrollably at around 30,000m. Then I go build rockets because I've managed to work out how to get them into orbit.

Methinks more torque is required...

Luckily for you, in .23 tweakables you CAN do exactly this! Once in space, simply tweak your ailerons, and any other control surface you want to stay still, to inactive for all 3 axis....no more distracting flopping about during maneuvers.

Just make sure to turn them back on before re-entry.
