Up and Down keys (W/S) are not for moving "upwards" and "downwards". They're for rotating your ship in certain - or opposite - direction. That direction depends on how your ship is oriented in space.

The controls are actually pretty easy, it's just matter of getting used to them. I recommend you to try the training missions (in main menu go to Start Game -> Training) as they will show you how these things works and allow you to practice.

I know what the controls are. It just if it starts to spin the controls all end up in opposite directions. Wondering if there a way to lock the camera to follow the ship as it turns?

Tutorials should show you how to control your rocket. The biggest thing to remember is where the toggle for SAS is (T). Turn it on during launch to stabilize your flight. You can still make adjustments with it turned on with the key controls. Now letting go of the key will let the ship stay where you put it.

To avoid losing orientation pay more attention to the nav-ball on the bottom rather than your camera view. The key commands are mapped to that ball (as they would on a real spaceship I imagine.

Some cases where the keys actually have to map to your camera movement exist (such as docking) in which case tap the V key till you get the "chase" camera. That camera maps your view UP to the navball UP. Flight controls are like an airplane at that point.

Can you also put the camera in chase mode to stabilize the camera orientation to the rocket at least? Never tried this personally.

I found that only useful for docking. For everything else navball is your control instrument and what's above it is just pretty cinematic.
