Would it be possible to have a celestial body in KSP similar to Phobos?

Phobos, Mars' moon, if you don't know, has a giant crater in it. Its small size allows the crater to remain very deep without collapsing. If a body were to be procedurally generated like this, I think either the base of the crater would be far below "sea level", or the majority of the surface would be far above it.

I have also noticed that the smaller, more rugged bodies have a sort of balanced shape, not very realistic. Is this a limitation of the procedural terrain generator? Or perhaps it is just easier to make them this way? What would it take to make an unbalanced world?
