It depends on whether you want Real Fuels plugin to be stock-compatible or not.

For stock-compatible, or even RSS without RO, Realistic Stockalike is probably the best option. This is good for giving more fuel variety without any added requirements. Anything with the 1/2/3m size system will break a lot of stuff. Not everyone wants to be chained to Stretchy Tanks and forced to install additional config packs with resized decouplers/fairings/etc. only to fix something that shouldn't have been broken in the first place.

For RO, it's completely the opposite. Real Engines (resized) are better option now, since RO forces 1/2/3m size system anyway and has resized stock parts.

Default RF config with anything resized makes no sense. If you want RF to "require" RO, in that case maybe it's better to merge RF with RO. If you want for RF to exist as a standalone plugin, maybe the best option is to have two configs: a stockalike config bundled with RF and a realistic config bundled with RO. They probably should have the same filename to allow overwriting to avoid conflicts.

Is there a simple way to add a metholox mode to all the engines?

I voted for the second one. Now I'm using the engines.cfg from the old ModularFuelSystem v3.2 real fuels & real masses. I tried realism overhaul, but I didn't like the idea of resising parts.

I'd like simply more engine/fuel options in the stockalike category. I like the feel of this game, where it's not insanely hard to get to places. But, I'd like to use realistic tools to get there. So having options of which engines to use, what fuels they use, and setting up the best mix is what make this enjoyable, for me anyway. Basically, moar options for stock scales.

My preference would be for reasonably scaled thrust and weight and real fuels but keep the stock sizes. I really hate dealing with resize 1.25 /2 /2.5 etc sizes, spend all of my time trying to make things fit together and not look terrible. I play with the real sized solar system, but stock parts (with KW and NP2).

To clarify my last post. What I'd like is all engines fit into one of the standard kerbal sizes: 1.25, 2.5, etc.
