Helping my teacher design a class

One of my teachers asked my to think of projects for people to do for a brand new class next year that she is teaching. I'd like to hear some of your ideas.

Details:

Class name: Earth and Space Systems

Length: 2 semesters

Grade: High school

Specifics: Projects that people can do both in a group and independently for a unit "Space technology"

If I become a teacher, I'd love to go to a school and ask them If I could teach an elective similar to this that uses KSP.
