So, by extension, I would rather have other star systems than multiplayer, though we would need some new propulsion systems to make interstellar travel feasible, propulsion systems that would make interplanetary travel as easy as going to the Mun or Minmus is now.

I would rather have more and different celestial bodies in the Kerbin system than either of the options the OP gives.

Edit: Also, the Kraken seems to punish those who dare get too far from the body they're orbiting, interstellar flight will need those problems fixed. Plus I believe KSP uses 32-bit floats to store altitude, they may not be sufficient for interstellar altitudes.

Having established that, I can say that extreme costs or extreme science costs, extreme difficulty launching to space, or only function as a way to go through a single wormhole to reach another solar system, could counter that. A wormhole on the edge of the Kerbolar system?

Hmmm. Maybe just as simple as having the interstellar drive only work above a minimum altitude from Kerbol. Or get more efficient/powerful with rising altitude. Not necessarily realistic, but game balancing.

Well there already is the KSP Intersteller mod, which presents a very good and not OP warp drive that actually works and if Scott Manley is considered a good source, he feel they are pretty well balanced.
