docking hub on Gilly

If I were to bolt a structure via KAS to the surface of Gilly to use it as a wharf/dock/quai, would docked ships bent around (when docked from above) the structure or is Gilly's gravity just to weak to put any stress on attachment nodes?

Gilly's gravity definitely puts stress on any structures landed on it. It's very small stress but if the connection is particularly weak and in wrong direction, it will bend. A ship docked to horizontally oriented docking port Jr will very likely not stay horizontal, for instance. But for docking ports oriented upwards and normal ships that should not mean any problem.
