Yah I've copied all his craft but they just veer off the runway or fly into the ocean (seriously who thought it would be a good idea to put KSC runway next to the water)

I suggest starting the throttle on a low setting, to get your plane/jet situated right. Build up the throttle when you know your vehicle will move straight only.

Second, merely TAP the directionals, until you get it in the air (hit s or w... can't remember which, to get it to lift into the air early); THERE you can push hard into them, to get what you want (but be soft with landing, again, unless you wanna resort to parachutes).

If that's your problem then you should widen your landing gear wheel base to prevent sideways movement. When you are hitting 100m/s down the runway you are approaching terminal velocity so lift is not your issue. Make sure your lifting surfaces are well in front and/or behind you CoM. Your rear gears and CoL should be close to CoM. You will take off in a light aircraft when these checkpoints are ticked.
