It wouldn't be that hard. You just line up the ships with the arc while docked, undock them, then conveniently remember to start recording.

I've done flybys under the arc dozens of times, that is really all it is.

Were these two pods put into this orbit, undocked, then redocked, or did he rendezvous two separate vessels into a coinciding arch-diving orbit then dock them?

Either looks awesome, though the latter would be a real triumph.

Regardless of whether they started the orbit already docked, and then undocked before the clip began, managing to time it just as they passed under the arch is rather commendable. I, would like to see someone do it without all that helpful data showing and not using infinite fuel.

I've got no bleedin' idea where the arch is... I think I saw it once from the orbit of my Mun Research Station, but that's it. That, and I never practiced low altitude orbits at the mun. Doesn't seem to be particularly hard, but I can see things going wrong...
