[0.17] What does the Patcher do?

I'm completely new to these things. So can someone explain what a Patcher do?

And because i'm running on a mac, so I can't open .exe files.

It will patch your KSP to the latest available version. If KSP is not present in the folder where the patcher is located, it will download the entire game.

So just login with your store email and password and it will do the rest for you.

Also, I believe there's a Mac compatible version available too, but apparently it has some problems. But the full game (0.16 and 0.17) can also be downloaded from the store.

The Mac version of the patcher will use Mono to run the .exe file.
