I was also interested in modifying the UI and was looking to see if I could change anything, only to find out that the UI textures might be changed in the same way as mods like changing NavBall. However, I have no idea where the vanilla UI textures are. KSPCommunityFixes has features to modify the UI, but that source code was too difficult for me lol.
