The saved ships still work when going straight to the launch pad. Also, this is what the rocket is supposed to look like.

A weird issue that I though was related to the broken symmetry remains. Subassemblies and saved ships using stretchy tanks in symmetry load with all the parts disconnected but opaque in a bizarre way as shown in the attached screenshot.

Hey Nathan, I was thinking it would be cool if you could add space for kerbals to tanks to make a sort of wet lab like skylab.

Add fins, kind of like an arrow, It fixed the flipping for me on real kerbin.

When I updated to your new patch it broke using symmetry with stretchy tanks. When I use symmetry the original tank is fine but the copies are infinitely long and can't attach. When I load a ship with symmetrical stretchy tanks all the pieces act like they are unattached. When I reverted the last version everything was fixed.
