Weights

There should be a mod that adds weights, and my idea of a weight would be a small object you can place anywhere on your craft that has changeable weight. Uses for this would be to change the center of mass on a plane to match the center of lift, without having to move the wings, thus making it look different than you'd like. Its probably already out there so if it is just let me know.

Can't change in flight though if that's what you're looking for.

someone made a weight mod for aircraft a while ago, you could set the weight in VAB and drop them during flight to change your CoM. Forget the name but it was back in 0.23-0.24 so may not still be compatible, even though it was just a part

You'd need tweakscale though because the gantry is pretty big.

In my maritime pack there are small parts that hold up to 5 tons. You'll need the compressor and decompressor to generate and release it but it's what you're looking for
