Spin ing when I try to angle during takeoff

When I try to angle at around 45° at 10,000 like most tutorials say my rocket starts to spin uncontrollably. I've been dealing with it and just launching it straight up but that isn't as efficient so decided to come find out why.

The new aerodynamic model in 1.0 (and the more recent patches) tends to make rockets flip when the orientation goes too far from prograde. Try keeping the rocket's orientation near the prograde vector in the first 10-20 km of atmosphere. Adding fins to the bottom of the rocket helps too.

Also, start your gravity turn right after leaving the launchpad so that you don't have to turn over to the horizon more aggressively later on. Turning over 5 degrees is good enough.

an alternative after the initial tilt is to keep SAS at prograde instead of stability. Prevents drifting but requires a deeper (or earlier) initial dip as the craft will dip more slowly than with SAS off.

Still, achieving 45 degrees by 7-10km is a good check to verify the gravity turn progresses at the right speed.

That happens because the front of your rocket gets empty first, thus the center of drag goes to the front as well. If you point too far from prograde, this effect overcomes center of lift stability and you will flip.

That is a problem with a space plane design I have that has a cargo bay at the front, but the design doesn't allow it to be moved, so I have to live with it and be very careful flying it. It's like a twitchy RWD car :D

Another also well known is DasValdez who runs a twitch live stream called Kerbal Space Academy where he answers questions for beginners. There are of course many others, these two are just invaluable resources.
