Is there a way to connect spaceships without docking ports in demo?

Short and pessimistic answer: no.

Long and slightly less pessimistic answer: I doubt it. You could try to create some sort of interlocking stucture using the modular girder (which IIRC is available in the demo) but you are going to have two big problems. Problem 1 - things will break, especially in the transition between warp / ordinary time. Problem 2 - when physics are no longer applied (i.e. when switching away to another craft) your interlocked ships will be treated as two separate entities and will drift apart since their orbits cannot be identical.

I suppose technically the parts of the station don't need to connect?

If they are in stable orbits a few meters from each other then the crew can just EVA from section to section as they need.

It's unusual and perhaps not efficient but I can't see why it wouldn't work. (Depending on what your trying to do with the station)

My usual advice in questions like this is "just buy the game."  Seriously, it's not even $30, and you'll get hundreds of hours of bliss out of it.  It's totally worth it, and about as high up the fun-per-dollar scale as you'll find anywhere.  It even beats out bottle rockets and rubber bands.  :)
