64K...scaling everything else up?

After playing with the regular scale Kerbal system for the entire time, I come to find out the 6.4x scale up mods are closer to real world scales.  Out of curiosity I downloaded and started a save with the 64K system.  However, I'm not sure if using stock configured (as best I can tell) engines matches up with this new scale, creating quite a sharp increase in degree of difficulty.  

Basically I'm looking for something between stock on the lower end in terms of difficulty, but not as hard as RO/RSS.  Any advice?

You can get a mod called SMURFF which rebalances the weight and thrust of the engines, and the weight of the tanks so they are closer to real scale. In the cfg of the mod you can adjust how much does it change thing. On the other hand if you want limited ignitions and everything else that RO has you can get Real Fuels Stockalike which allows you to use Real Fuels with stock parts. Happy Flying! :D

I think I read somewhere you'll actually get better mileage out of the original real fuels, but I'm not sure. I haven't had a chance to look into it myself. I'd recommend RealFuels (not sure which cfg, as mentioned), and SMURFF

 I downloaded SMURFF and set the levers to 0.5 as recommended in the readme.  From what I can tell it changed the thrust levels and the fuel tank capacity and dry mass.  I don't need as absurdly big of a rocket to get into LKO. 

Does SMURFF change the ISP too?

Another question I haven't been able to answer through searching...what does an optimal ascent profile look like with 64K?  So far I've been using mechjeb to cap max acceleration at 15-17 m/s^2 (playing around with that number), and then once the craft gets to 100 m/s I nudge it east, turn SAS off, and let it follow the prograde bubble till about 15km.  Then I'm not really sure what to do from there?  Any advice?

Well, I learned something new today! Thanks....I'm ashamed to admit how long I've played that way, haha.   Also it's pretty cool to have one of the dev staff reply to a comment. 

Looking back, I'm pretty sure everything I've accomplished so far in the 2ish years of playing has been the result of insanely over-engineering everything, so I'm enjoying the process of going back and learning how to do it closer to how it is actually done.
