How utilize scanning tech and how make science from it?

No offense, but next time, it might be better to just explain in text, rather then making us watch a 12 minute video of your attempt and guess.  A picture isn't always worth a thousand words, especially if there's not enough context.  In a nutshell though, stock orbital scans are all about ore, they aren't really focused on science.  For science get ScanSat.  IIRC, the overlay is basically a heat map, the brighter areas have higher concentrations of ore.

A small tip concerning your rocket launch, if the base of the fairing is the same diameter as the top of the launch vehicle it will create a lot less drag then having the big flat plate at the top of your upper stage

Yes, scansat is a mod.  It's a little more involved then stock resource scanning, because it actually requires you to map the entire surface of the planetoid, but it does generate way more science.

There is no one good way to make lots of science points.  You can get them through contracts, experiments, sample returns, eva and crew reports, tons of different ways.  There is way more science available in the kerbol system than you will ever need to unlock the whole tree.  In fact, people have unlocked the whole tree without even leaving Kerbin.  Generally speaking though, the further out from Kerbin you go, the bigger the science return.
