I saw someone make a jet that had the Mk. 2 Cockpit (the one with the point) and it had a Mk.1 Nose cone, long, on it, but the cockpit didn’t have an attachment node on it. link to pic is below, how can I make something like that?

Some parts don't need a node to be attached to, instead they will be attached to the surface of another part. You can place the nosecone (actually I guess it is the tail connector A) somewhere on top of the cockpit and with some help of the 'move' and 'rotate' tool, put it into the right place.

This cannot be done with every part but there are two possible workarounds:

1) Use the 'Cubic Octogonal Strut' which can be surface attached. Place it somewhere on your craft and connect the part you actually want on top of the strut, than clip the strut inside of the craft so it becomes invisible: done :)

2) The mod 'Editor Extensions Redux' allows to enable surface attachment for every part:
