What is adjustable about the "adjustable ramp intake"?

In the real life, the faster the airplane goes, the more dynamic pressure it shoves on the engine intakes - what can choke the engine. It's the Compressor Stall.

A variable ramp intake (as used by F14 and F15) it's a device that aims to slow down the airflow a bit, so the aircraft could have its engines running on greater airspeeds that it would withhold without it.

In KSP, these things are highly abstracted. Intakes just takes less air as the airspeed increases, and the KSP's ramp intakes have a different loss curve than the ordinary ones - what ends up having similar effects.
