Why is this Possible?

Would you rather the atmospheric deceleration on that steep re-entry have killed your Kerbals?

frankly, yes. if suffering through 40 Gs has no effect on the crew or ship whatsoever, I'd rather they just take out the G Meter altogether.

I remember a while back there was a challenge to get as many G's without going out farther than the Mun's orbit. I could barely muster about 30 but some guys were hitting around 50, 60, even 70 G's I think. That must have been rough for those Kerbals. Oh and you have to make sure they lived I think, that's were I was always screwed over.

It's good to have it in, yes my Kerbals are unaffected by G's but still it's nice to know if I do this reentry I get so many G's. Which will help when pancaking Kerbals becomes possible

There's a huge difference between instantaneous Gs and sustained Gs. High speed auto crashes during races have produced over 200 instantaneous Gs and the driver survived, but typically over 100 Gs is fatal. Colonel Stapp (as noted above) survived over 40 Gs for several seconds. Longer sustained Gs are survivable up to about 10.

I assume the KSP G-meter reports max instantaneous Gs, but I have no way to tell for sure.

The meter requires it to be sustained over a certain time, or somewhat stable over that time. While doing the maximum mgforce challenge, I got a reading of something like 60g's. However, taking the velocity data from my flight, my actual maximum deceleration was closer to 100 or 120g's.
